Who doesn't love a good fiesta in the morning?!?!
If you are any thing like me, you probably have a few go to recipes you tend to eat for breakfast over and over and over again.
Bacon and eggs.
Some sort of omelette creation.
Or any number of the other amazing breakfast foods that are out there.
However, every once in a while, I want something a little bit different to spice up my breakfast menu.
That's where this super simple breakfast casserole comes into play.
It's wildly easy to make.
It's something a little bit different than your standard breakfast.
And it's packed with protein, which I am a huge fan of!
With all that being said, let's get into the recipe.

This recipe is actually courtesy of one of our members, Mrs. Erica Johnson.
During one of our nutrition challenges, Erica posted this recipe in the private Facebook group we had and I thought it was a fantastic idea.
I like taco meat. I like eggs. What could be bad about combining the two together?
The answer is nothing.
And in fact, it's amazing.

This is going to be a very short list and based on what I use.
I will have a substitutions list below with some other ideas to add some variety to the recipe.
But here is all you really need to get this going:
I like to keep it simple and this definitely fits into that category!
There are a handful of ways you could add a little more variety and creativity to this. Here are a just a few that I thought of.
The Final Thought
One of the main reasons I love this dish so much is that the leftovers taste great heated up in the microwave.
I don't usually like reheated eggs, but I think the combination of the taco meat, veggies, cheese, and delicious toppings all help to make that a non-issue here.
I don't have kids, but I have to imagine this recipe could be a home run for the entire household, which I know is a concern of a lot of my members.
